Emoji Post…Oh! There’s Also a Recipe For Roasted Butternut Somewhere in There.


You know that moment when you talk to yourself and you start smiling like an idiot because you are just so hilarious? Well this post can be summarized as that moment…YES it was a realllllly long moment!

I am no stranger to  the lazy bug weekends, that’s why I firmly believe that Sunday mornings should (involve endorphin raising activities-these vary between people- it may be a work out for some,or a roll in the hay literal or figurative! for others. Hey get your endorphins where you can, no judgements here!)  be easy … like your friend Shoquanda from uni! and there’s nothing easier than shoving something into your oven…just make sure its not a bun…coz those you have to raise for at least 18 years before they leave your house.

Can I have one more Sunday... But a REAL Lazy Sunday this time:

This particular Sunday, stomachs (Ziz and Pookies) were grumbling…and they were both giving me their puppy dog eyes…the ones that tug at your heartstrings.

They were obviously hungry-but so was I, yet it always seems like I’m the one who needs to figure out what will go into everyone’s stomach! #AdultingIsHard! #MomingIsEvenHarder #MomJeansWouldRockWereItNotForMomButt #SayNoToWedgies.

Pookie had been out of town (he was in Meru) recently and he come back with a bunch of butternut squash…and let me tell you this squash was what God had intended squash to be! I mean Old McDonald McBaitome (the boy farmer) or McMukomunene (the girl farmer (I’m all about girl power) Image result for girl power emoji had taken his sweet time with these babies! They had been allowed to mature before being picked…and so the sugar content was off the chains high! Infact I suspect that they were getting massages with soft spa-like music playing in the background as they grew! I highly doubt if Old McDonald McBaitome/McMukomunene  was shouting at this crop of butternut squashes, all conversations directed at or around the vicinity on the butternut must have been in soft  , hushed tones (word is folks from the Meru Community are prone to bursts of anger that may be directed to butternut) … all my Meru’s out there don’t stone me! In Primary school I was in the same class as a Meru…her name Kathambi…I have a Meru friend Ms. Mukiri…Eva thats you! AAAAND my sister in law IS Meru… in fact she helped me come up with the perfect meru name…see the screenshot below Image result for pointy finger emojithis is one of those disclaimers similar to how Americans (NO NOT HERE)  pull out Rev.   Al Sharpton    when they say something construed to be politically incorrect about race!!!)

Now, where was I before embarking on this tangent….Ah yes! A butternut is so self-reliant that it doesn’t even need to be refrigerated, and it can be stored in a cool dark place for several weeks. Here’s a few tips for picking out a

  • Choose a squash that is heavy for its size when you pick it up.
  • The stem should be intact, firm, and dry.
  •   Each variety has its own color  but in general choose squash that is rich and deep in color.
  • A pale spot where the gourd rested on the ground is okay as long as it is not green.
  • The skin should be dull and matte. Shiny skin indicates that the squash was picked too early.
  • Cuts, cracks, and soft spots, which can lead to mold growth.

If you are not an emoji freak and you are reading this because you want the recipe portion of this post… here is my easy Sunday meal is roasted butternut squash:


  • 3 Medium sized butternut squashes {that did not have McBaitome (the boy farmer) or McMukomunene hurl insults at them as they were growing}
  • 4 medium sized onions
  • 1 Head of garlic
  • 1 Tbsp fresh rosemary (you can do 2 Tbsp or dried rosemary)…I feel so disrespectful to all the people out there called Rosemary for spelling rosemary in lower case-SORRY *insert Justin Bieber ‘Sorry’ Lyrics…although Rosemary I’m not needing more than just your body*.
  • 1 Tbsp Cardamon powder
  • 1 Tbsp Paprika
  • 2 Tbsp Honey
  • 2 Tbsp Olive oil

Pre-heat your oven to 180 °C

Peel your butternut squash (see this post for tips on how to do so without slicing off your hand), onions and garlic. Place them on a baking tray (line your baking tray with foil if you are super committed to the lazy Sunday theme). Quarter the onions, and give the garlic cloves a once over squash with the back of your knife (you want them whole…we just want to help them infuse the butternut with their wonderful flavour), then add these to the butternutSprinkle the cardamon, paprika and rosemary. Drizzle the olive oil and give everything a good rubdown. Place your baking tray in the middle of the oven and bake for an hour. At the 40 minute mark drizzle the honey and move your tray to the upper rack in the oven.

I love the bits around the edge of the baking tray, because that’s caramelization HQ! Because it was a lazy Sunday we may or may not have eaten right off the baking tray.

Remember, you only live once so scrape and lick that baking tray if you must.

This roasted butternut recipe makes a great base for salads…if any survives the onslaught that’s  to be expected!
